I've had a few people ask me about my recipe for Sugar-Free Mojitos. Since today is "my" day on the blog, I decided this was a pretty good place to share it.
Since most of my life has been spent living with Diabetes, I've learned to make most non-diabetic friendly things, "Cara-friendly". I wear a pump, so, to be honest, most foods have been made workable. Drinks are pretty much another story. There's nothing greater than pure liquid sugar to make my blood glucose rise. I've learned to pretty much do without milkshake and malts. They aren't that big of a deal for me, so I've learned if I really want them, just to take a little more insulin and have a little. A "Real" Coke? I seriously can't think of the last time I've had one, maybe in the late 90's when my blood sugar crashed and I didn't have any candy with me... Juices, sodas and mixers are another completely different story. As much as I might want the Hurricane, the Mudsling or the White Russian, out in the real world, I don't.

Enter the very Latin inspired, Mojito. Why is it that places might have a Mojito on a Happy Hour menu for $3, but make it low calorie, and that simple drink of lime, mint and rum, has jumped to $10 a glass? At bars and restaurants, I tend to stick to Rum and Diet Coke, or even a beer, but in my own home? and Especially in the heat of summer I run to the garden and pick my own blend of mint to make the one, and the only, Sugar Free Mojito!
I'll be honest, I grow different types of mint. I have the standard Peppermint, but there's also Spearmint, Chocolate Mint and the delicious Pineapple Mint. There are over a dozen different mints, easy to grow; yummy to consume. Search mint recipes and you'll get a boatload. And did you know mice don't like the smell of mint.

But onto the recipe...
Sugar Free Mojito
8-10 mint leaves
3-4 packages of Splenda
2 oz lime juice or half a lime
1.5 oz light rum
Sugar Free Sprite, Diet 7-up or Diet Sierra Mist
Mudder leaves with the Splenda in a flat bottom glass. Either mudder the lime half (cut into quarters) or mix in the lime juice. Fill the glass with ice. Pour in rum and soda. Mix by pouring back and forth between 2 glasses.
Note: You can use Truvia, use whatever Sugar-free sweetener you like. I just happen to like Splenda. As for the rum, use what you like, there are days I use White Bacardi, but other days I use Captain Morgan's or even my new love, Captain Morgan's Black. I'm a huge lover of Diet Sierra Mist. It's my main mixer of choice. If you want to treat yourself, mix Diet Sierra Mist with UV Cake Vodka
