I grew up in the fruit growing belt in Michigan. My grandparents had an orchard, and I would happily spend summer days in the garden picking all the berries that I could. I really love BLUEBERRIES and blueberry crumble, warm from the oven and served with a scoop (or two!) of vanilla bean ice cream. Since blueberry season is right around the corner, it seems like a great time to share a recipe featuring those beautiful blue morsels.
This is a SUPER easy recipe. I hope you enjoy!
BLUEBERRY CRUMBLE
Ingredients:
Filling:
2 Cups Blueberries
1/4 tsp of cinnamon
Sugar to taste (I use 2tbs)
1 tbs of flour
(optional: a little grated lemon peel)
Crumble Topping:
1/2 cup Butter (room temperature)
1/2 cup Flour
1/2 cup Sugar
Preparation:
This recipe is for those of us either too lazy to make a pie, or those of us that lack the skill to make a decent pie crust! Preheat oven to 350 with the rack in the middle position. Add your washed blueberries to a mixing bowl add cinnamon, sugar and 1 tbs of flour, and your lemon peel, if you're using it. Set aside.
For the crumble, mix the flour and sugar, then "cut" the butter into the flour/sugar mixture using either two forks or a pastry cutter.
Add your blueberry mixture to a buttered 2 quart casserole, then cover the blueberries with the crumble.
Bake 45-50 minutes, or until the crumble is golden.
I would HIGHLY recommend eating it with homemade whipped cream, or vanilla ice-cream! Send me a picture if you make it!
